Real Events – Going Tropical “Green” for Board Appreciation

At Dubsdread Catering we love being dedicated members of the team that makes your big event your best event. While we are masters at the planning and executing the behind-the-scenes work, we know our clients have their own unique perspective they want to bring to their event. We thank recent client City of Winter Park for graciously sharing their event details to benefit others in their planning.

What was the occasion for the event?
It was an appreciation event of those who donate their time and talents to serve on the City of Winter Park’s Advisory Board.

Why was the location selected?
As a City of Winter Park event, it just made sense to host it at our beautiful new Winter Park Event Space. Especially considering the reservations office is located at City Hall, 401 S. Park Ave., Winter Park, FL, 32789. More information, as well as virtual tours of the spaces can be found online at: https://cityofwinterpark.org/departments/parks-recreation/library-events-center/

Why Dubsdread Catering?
Dubsdread Catering has a reputation for delivering exceptional food and service. As one of only a few approved catering partners at Winter Park Events Center, they were the right choice to bring fun and unique menu options – tropical with a twist – we wanted to serve our guests.

How did Dubsdread Catering make this a “Green” event?
Dubsdread Catering was thrilled to partner with the City of Winter Park to make their first fully “Green” event a success. Working with O-Town Compost, we had bins, signage, on-site monitoring, and sorting, plus hauling and processing of food waste to assure every item used at the event was properly disposed of, recycled, or composted. It is said that the average wedding in the U.S. produces 400 pounds of waste. By choosing to go “Green”, clients can reduce their waste by up to 75%. Another reason to partner with Dubsdread Catering is they were true to the theme and the principles of the client.

What type of menu was served?
The event was an appreciation event designed to treat and thank those who serve on the board. It was a socializing mix-and-mingle so a heavy hors d’oeuvres menu with a lot of bite-sized, easy to grab, and fun on-theme items was a must. Dubsdread Catering nailed it with a variety of unique tidbits and treats that were tasty and fun.

What were the favorite foods served?
In addition to the Hot Honey Butter Chicken Biscuit, the Mais Con Yelo was hands down guests’ favorite item served. The Mais Con Yelo was Chef Niegel Blas’ take on the Filipino-inspired Popcorn Shaved Ice dessert. Instead of the traditional method of shaved ice with corn kernels and condensed milk, Chef Blas created his own house-made popcorn milk made of popcorn steeped in milk and condensed milk overnight to absorb the flavor. When served, the bowl starts with a base of cornbread, then a generous helping of the house-made popcorn milk after it has been flash-frozen using liquid nitrogen, and a topping of cornflakes for a crunchy finish.

What kind of entertainment did you have?
In keeping with our theme, we had a steel drum player playing throughout the event. It added a nice touch to our tropical theme while making conversation and socializing easy.

What went well and what would you do differently?
It was a wonderful event, and the feedback was all positive, so we wouldn’t change a thing. The team at Dubsdread Catering went above and beyond with their creative food and exceptional service. The only thing we would have changed was to make it last longer!
